A 500-hectare organic farm specialising in white Chianina cattle fragrant olive oil and white truffles. Guido and others have worked hard to provide somewhere stylish beautiful and bio-sensitive to stay on this glorious nature reserve and operational farm. The farm is managed organically with a herd of 60 Chianina cows bred in the area since the Etruscans. All their feed is produced on farm ensuring its quality and meaning that the finest flavoured meat is guaranteed. There are three farmhouses here all with sweeping views. The largest 'Le Trosce' (sleeps eight) is a self-contained home all on one floor but with several levels. 'Doderi' is divided into three apartments simple and minimalist with joyous bedcovers and 60s-style furniture for stylishness originality and colour. The apartments in 'Brentina' deeper in the woods are a touch more rustic though designers will love the simplicity of the whitewashed walls the spacious rooms and the handmade staircase; all have delicious bathrooms and never-ending hot water. Most of the apartments are centrally heated by a wood-fired furnace which also heats the water. Down at the main farm there is an orchard orto (garden) pigs and hens. Lo Spaccio the organic farm shop - can provide you with all the ingredients required for a relaxed breakfast or delicious picnic lunch. In fact you can taste the best organic produce of the region without leaving the farm. Partake of the Italian tradition at Barbialla by joining us for a home-style meal cooked by Maria-Therese using organic ingredients. You can also enjoy a private dinner in your apartment or on the terrace overlooking the rolling hills. If you would like to learn the secrets of Italian cooking we have a chef at your disposal to teach you and provide you with a feast to enjoy. There are extensive trails throughout the property inviting you to explore the unique Tuscan landscape; visit the lake on a hot summer afternoon walk through the cool shade of the woods in the truffle zone or stumble upon one of the ruined Casa Colonica' dotting the landscape. Perhaps you will meet a porcupine deer or wild boar family. Outside the houses are pergolas patios and pools chic with deckchairs surrounded by olive groves and fruit trees. Each apartment has books in all languages and CD players so that the outside world need not interrupt your idyll. There is no pressing need to leave the property but if you would like to explore the historical treasures of Florence Pisa Siena or Livorno they are just a short car or train ride away. Alternatively you can stay local and rediscover historic mountain towns such as Montaione San Miniato or Certaldo Alto. These local villages have festivals throughout the year for example the San Miniato Truffle Festival in November and Carnevale in February.Every season brings its treasures to bear at Barbialla Nuova; the Autumn is the time to go if you fancy a spot of truffle-hunting accompanied by an expert and his dog or to taste the treasures of the harvest from chestnuts to freshly pressed olive oil. The soft Spring sunshine highlights the unfurling blossom and is the ideal time to visit Barbialla awakening from its Winter slumber. Winter nights can be spent in front of the open fire enjoying a bottle of fine Italian wine. The Summer heat invites you to enjoy the cool water of the pools bathe in the Tuscan sunshine and eat delicious sun-ripened tomatoes.
